Shredded Beef Chimichangas



Ingredients:
Beef Roast
½ Cup Salsa
1 Can Green Chilis
Shredded Cheese
Tortillas
Vegetable Oil
Recipe:
Cook beef roast in crock pot with salsa & green chilis(time depends on size of roast). ½ hour before beef roast is done cooking, shred & let cook remainder of time. Make burritos with shredded beef and cheese. Coat bottom of frying pan with vegetable oil. Cook burritos on each side until golden brown.
Comments: This was a really easy recipe and my family all liked it. We would definitely make it again.

Pan Fried Chicken Tenders

Sorry, I forgot to take a picture, but I wanted to put this recipe on here because it was so good!

INGREDIENTS
1 pound chicken tenders
Salt and pepper to taste
1 cup all-purpose flour
1 large or extra-large egg, beaten with 2 tablespoons milk
1 cup dried breadcrumbs, seasoned with salt, pepper, thyme, marjoram, garlic powder, and a little grated Parmesan cheese, all to taste
1/4 cup olive or vegetable oil (more if needed)

Recipe:
Pat the chicken dry with paper towels. Season lightly with salt and pepper. Dip each tender first in the flour, then the egg wash, then the breadcrumbs. Shake off excess and place on a baking or cooling rack. If time allows, chill in the refrigerator for about 30 minutes to help the coating adhere to the chicken. Heat the oil, enough to generously cover the bottom of a large skillet, over medium-high heat. Add the chicken, being certain not to crowd the pan, and brown on both sides, about 3 minutes per side. Place on cooling rack to drain. If desired, sprinkle with a little more salt. Serve immediately. These are also good warm, room temperature or cold.

Comments: We all loved this recipe, it was delicious! I didn't use all of the seasonings in the bread crumbs that it called for. I used 1/2 Italian bread crumbs and 1/2 regular bread crumbs with salt, pepper, garlic salt, and shredded parmesan cheese (all to taste). I also didn't let them sit in the fridge for 30 minutes and they still turned out really good. I would definitely recommend trying this recipe!

Shredded Chicken Fajitas



Ingredients:
1 Rotisserie Chicken
1 Green Bell Pepper
1 Yellow Onion
McCormick's Grill Mates Hamburger Seasoning
Flour (or corn) Tortillas
Shredded Cheese
Salsa
Sour Cream
Recipe:
Shred rotisserie chicken. Cut up bell pepper & onion and saute in frying pan to your liking. Add in shredded chicken. Season with McCormick's Grill Mates Hamburger Seasoning to taste. Let chicken cook with vegetables (stirring occasionally) for about 5 minutes. Serve on tortillas with toppings.
Comments: I made up this recipe on my own. I love cooking with rotisserie chicken, I would much rather buy a rotisserie chicken and cut it up or shred it instead of having to cook my own chicken. Plus, it has way better flavor than the chicken I cook. Anyway! I know this is an odd recipe for fajitas, but my family loves this meal, it is simple and easy and it tastes great. My friend told me about using the McCormick's Hamburger seasoning for fajita's and it tastes really good and gives it the perfect flavor.

Chicken & Rice Casserole


Ingredients:
2 cups white rice (cooked)
2 chicken breasts (cooked & cubed)
frozen Peas
1 can cream of chicken soup
½ cup milk
½ cup mayonnaise
shredded cheese

Recipe:
Fill casserole dish with white rice. Put chicken over rice, cover with frozen peas. Mix together can of cream of chicken soup, milk, & mayonnaise and pour over top. Cover top with shredded cheese, cover with lid and microwave for 8-10 minutes.
Comments: We make this a lot, it is a good quick and easy meal (if you like casseroles). We usually use left over grilled chicken.

Slow Cooker Lasagna


Prep Time: 15 min Total Time: 6 hr 15 min Makes: 8 servings

What You Need!
1 lb. ground beef
1 jar (26 oz.) spaghetti sauce
1 cup water
1 container (15 oz.) BREAKSTONE'S or KNUDSEN Ricotta Cheese
1 pkg. (7 oz.) KRAFT 2% Milk Shredded Mozzarella Cheese, divided
1/4 cup KRAFT Grated Parmesan Cheese, divided
1 egg
2 Tbsp. chopped fresh parsley
6 lasagna noodles, uncooked

Make It!
BROWN meat in large skillet; drain. Stir in spaghetti sauce and water. Mix ricotta, 1-1/2 cups mozzarella, 2 Tbsp. Parmesan, egg and parsley.
SPOON 1 cup meat sauce into slow cooker; top with layers of half each of the noodles, broken to fit; and cheese mixture. Cover with 2 cups meat sauce. Top with remaining noodles, broken to fit; cheese mixture and meat sauce. Cover with lid.

COOK on LOW 4 to 6 hours or until liquid is absorbed. Sprinkle with remaining cheeses; let stand, covered, 10 min. or until melted.

Comments: My family liked this meal, but we didn't think it had a whole lot of flavor. I will try it again, but next time I would layer the sauce and cheese instead of puting the cheese in the sauce and not use as much ricotta cheese as the recipe calls for.

Stove Top One-Dish Chicken Skillet


Prep Time: 5 min Total Time: 25 min Makes: 6 servings

What You Need!
1-1/2 cups hot water
1/4 cup (1/2 stick) butter or margarine, melted
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
6 small boneless skinless chicken breast halves (1-1/2 lb.)
1 can (10-3/4 oz.) condensed cream of mushroom soup
1/3 cup BREAKSTONE'S or KNUDSEN Sour Cream

Make It!
MIX hot water, butter and stuffing mix; set aside.
SPRAY nonstick skillet with cooking spray. Add chicken; cook on medium heat 5 min. on each side.
MIX soup and sour cream; pour over chicken. Top with stuffing; cover. Cook on low heat 10 min. or until chicken is done (165ºF).
Comments: If you like Stove-Top then you will probably like this dish! We thought this was really good for a quick and easy meal, it was even good when I took as left overs for lunch the next day. I substituted cream of mushroom soup with cream of chicken.

My new recipe blog!

Keith and I have a new goal to cook more at home and not eat out as often as we have in the past. So, I have been trying out some new recipes and thought that I would share the good ones with you guys. I have realized that I really enjoy cooking! I mostly look for meals that are quick and easy since we both work full time and Keith has school 2 nights a week. Also, if you guys have any good recipes that you like to make at home and want to share, send them my way and I will put those on my blog as well.
I love that it is so easy to find recipes on the internet and just print them out, but I hate having all these loose sheets of paper laying around, so I decided to make myself a recipe book. I think it turned out pretty cute!


I have been trying out some new recipes and thought that a blog would be a good way to share the good ones with you guys. I have realized that I really enjoy cooking! I mostly look for meals that are quick and easy since my husband and I both work full time and he has school 2 nights a week.
